About Big Mack...

BIG MACK'S STORY   Like many cooks, Big Mack's interest in cooking started when he would hang out in the kitchen as a youngster. He would watch what his Mom was doing and ask the kind of questions kids ask: "Why do you put the meat drippings with the flour first like that when you make gravy instead of just mixing it all together?" "So it will blend nice and smooth and the gravy won't be lumpy. It's called roux."
    Small lessons for small kids, but they stuck with Big Mack throughout his life. The most important cooking lessons he learned were to not be afraid to experiment and to trust his taste and instincts. If something didn't taste right to him, it probably wouldn't taste right to others. If something worked for him, others would probably like it too. That proved to be the case with Big Mack's Handcrafted BBQ & Dippin' Sauce.
    In the early 1980's, Big Mack had finally mastered the art of indirect cooking with one of those small kettle grills (you know the ones I'm talking about), a far cry from the wood-fired pit he uses today. He would BBQ for friends and family and the occasional charity event. Although he had mastered cooking the meat, commercial BBQ sauces always seemed to come up short. Big Mack set out to make a sauce worthy of the time and effort spent on preparing perfect pork, beef and chicken. He started by taking the flavors he liked best from several available sauces. A little sweetness from this one, some tanginess from that one, a little kick from another. He experimented with different ingredients that would bring those flavors together into a unique blend. Finally he hit on a combination of ingredients that tickled the taste buds and complemented the meat just right. Big Mack's BBQ & Dippin' Sauce was born.
    Over the years, Big Mack gave away enough of his sauce to float a small battleship. Folks kept telling him he should put his sauce out there, to make it available to others. In 2003 Big Mack decided to follow his dream and share his handcrafted sauce with as many people as possible. You'll really be glad you tried it. ENJOY!
